Ingredients:
- 1 cup dried green split peas
- 2 quarts water
- 1 small ham bone
- 4 small potatoes
- 3 small white onions (or 1 – 1/2 large)
Instructions:
- Rinse peas
- Place peas, water, and ham bones in pot and bring to a boil over medium-high heat
- After reaching a boil, reduce heat to a simmer and cover. Continue cooking for about 1 hour, until peas begin to break down
- Dice potatoes and chop onions
- Add to pot and simmer for 30-40 more minutes
- Remove the ham bone and strain through a mesh strainer
- Serve with toasted and buttered bread
