Split Pea Soup

Ingredients:

  • 1 cup dried green split peas
  • 2 quarts water
  • 1 small ham bone
  • 4 small potatoes
  • 3 small white onions (or 1 – 1/2 large)

Instructions:

  • Rinse peas
  • Place peas, water, and ham bones in pot and bring to a boil over medium-high heat
  • After reaching a boil, reduce heat to a simmer and cover. Continue cooking for about 1 hour, until peas begin to break down
  • Dice potatoes and chop onions
  • Add to pot and simmer for 30-40 more minutes
  • Remove the ham bone and strain through a mesh strainer
  • Serve with toasted and buttered bread
