Creole Squash

Ingredients:

  • 2 lbs. yellow squash
  • 2 onions, sliced
  • 2 cups of canned tomatoes
  • 1 teaspoon mustard
  • 1/2 teaspoon salt
  • 1/8 teaspoon pepper

Instructions:

  • Preheat oven to 350F
  • Slice squash thin and arrange in a greased casserole dish
  • Add thinly sliced onion
  • Add mustard and seasoning to tomatoes
  • Pour over squash and onions
  • Bake for 45 minutes
  • Cover with grated cheese
