Ingredients:
- 4 medium potatoes
- 1 stick of butter (cubed)
- 1/2 cup uncooked white rice
- 1 lb ground beef
- 1 medium onion finely chopped
- Canned tomatoes (if desired)
- Salt and Pepper
Instructions:
- Peel and slice potatoes
- Place in the bottom of buttered casserole dish, salt and pepper to taste
- Dot with cubed butter
- Add uncooked rice, season, and dot with cubed butter
- Add ground beef, canned tomatoes (if desired) and season
- Cover with foil and bake at 350 F for 2 hours approx
