Shrimp Creole

Ingredients

  • 1 cup coarsely chopped green pepper
  • 2 cup coarsley chopped onion
  • 1 cup coarsley chopped celery
  • 2 tsp minced garlic
  • 2 cup whole tomatoes
  • 1 tbsp paprika
  • 1/4 tsp cayenne pepper
  • 1 tsp salt
  • 3 cups water
  • 1 bay leaf
  • 2-3 lbs. shrimp – peeled and deveined
  • 2 tbsp corn starch

Instructions

  • Heat oil in stock pan and saute first 4 ingredients until tender
  • Add tomatoes and brown
  • Stir in paprika, cayenne, salt & water
  • Add bay leaf and simmer 15 min
  • Add raw shrimp and continue simmering for 10-20 min
  • If desired, thicken with corn starch mixed in a bit of water
  • Serve with hot rice – makes 4-6 servings
