Ingredients
- 1 cup coarsely chopped green pepper
- 2 cup coarsley chopped onion
- 1 cup coarsley chopped celery
- 2 tsp minced garlic
- 2 cup whole tomatoes
- 1 tbsp paprika
- 1/4 tsp cayenne pepper
- 1 tsp salt
- 3 cups water
- 1 bay leaf
- 2-3 lbs. shrimp – peeled and deveined
- 2 tbsp corn starch
Instructions
- Heat oil in stock pan and saute first 4 ingredients until tender
- Add tomatoes and brown
- Stir in paprika, cayenne, salt & water
- Add bay leaf and simmer 15 min
- Add raw shrimp and continue simmering for 10-20 min
- If desired, thicken with corn starch mixed in a bit of water
- Serve with hot rice – makes 4-6 servings
